I have found that Caramelizing the onions is one of the most important steps to know about when learning how to make traditional French onion soup because this draws out the natural sugars, enhancing the onion flavor and sweetness. Have a good flavorful beef  broth, crispy croutons, and your favorite cheese. It does not need to be gruyere. jack, swiss, mozzarella, shredded parmesan, even cheddar. One trick to the onions part is to "deglaze" the pan just as the onions are done, with a teensie bit of brandy or broth.
