Potato Leek Soup: Prep time: 15 minutes Total time: 45 minutes
5 Strips of bacon, diced, most of the fat removed 2 Large onions, peeled and thinly sliced 2 Imported Bay Leaves 1 generous Tbs fresh thyme leaves, minced 1 Clove garlic, minced 1 Leek, white part only, rinsed and finely diced 1 Large baking type potato, diced (optional) 4 Cups milk (whole or non-fat) 2 tsp olive oil Freshly ground black pepper and salt to taste
1. Brown bacon in large pan, drain grease off 2. Add olive oil, onion, thyme, garlic, and leek. Sauté until onion is transparent. 3. Add potato and milk to onion mixture. 4. Simmer on low heat until potato is cooked. Be careful not to boil milk. About 15-20 minutes. 5. Remove bay leaves. 6. Place about ¾ of soup in blender and give a quick burst; longer if you like your soup chunkier. (A blender wand works perfectly! If you use one, skip step 7.) 7. Return blended mixture to original mixture, stir and serve.
