Baked Italian Parmesan A great Italian baked chicken paremsan recipe for the whole family.
Ingredients: 35 oz/ 1 kg chicken pieces Italian seasoned flour 2 tablespoons oil 1 tablespoon butter or margarine 16oz/ 440g fresh ( or canned) tomato puree ½ tsp dried basil leaves ½ tsp dried oregano leaves ½ cup tomato sauce salt and pepper to taste 7oz/ 185g mozzarella cheese, sliced ¼ cup grated parmesan cheese
Directions: Pound the chicken breasts till thin and tender ( use meat mallet or botton of coffee mug. Coat the chicken pieces in the seasoned flour, shaking off any excess. Heat oil and butter in a large heavy based frying pan. Add the chicken a few pieces at a time and fry until golden brown all over. Remove chicken from pan and place in an overproof dish. Place the tomato puree, garlic, basil, oregano and tomato sauce in a bowl, season with salt and pepper to taste. Pour the tomato mixture over the chicken. Bake in a moderate oven at 360°F/ 180°C for 1 ¼ hours, or until the chicken is tender.
Place the mozzarella slices over the chicken then sprinkle with parmesan cheese. Place back in the oven and bake for a further 10 minutes, or until cheese has melted.
