So I was reading a book, when I had the urge for a pizza.. son is already asleep, I am a wreck from heavy gardening, and I am too cheap to pay for delivery when the pick up guy is right downstairs.
"I know" I thought, I'll make "English muffin pizzas" that will minimally satisfy the urge. I turned on the oven in anticipation. (425)
I keep home made sauce frozen in sandwich bags for just such occasions.. Got the sauce out, and out of the bag into a bowl to thaw in the microwave.. grabbed some frozen roasted peppers as well. Head for the cheese drawer, not so much shredded mozzarella left.. hmmm..I have sliced provolone and white American (which is rich but bland and mild) so I will use all three.. I'm on a roll. everything's set to go, till I grab the English muffins I bought a few days ago.. hard as a ROCK. My grand had a couple and left the end of the bag open. By now I can almost taste those peppers... and then I remember.. I had pita left over from making gyros Friday night.. what the heck, I'll give it a try. Now the pita is just a tad smaller than a white paper plate, so I decided to eschew scrubbing the pizza pan and cook directly on the plate.
1. Sauce.
2. 1 slice of white American, crumbled in hand
3. 2 slices provolone crumbled in hand (could have used 1)and the mozzarella.
4. sprinkle with peppers that were pre warmed 1 minute in microwave
5. Bake 5 ish minutes till cheese is melted.
It was wonderful!! the edges of the pita got crispy, the rest held up for in hand eating.. actually far better than an English muffin pizza, and many frozen pizzas (I never buy them any more)
I may make these the next time we have family pizza night, since we all three like different toppings!!
