I'm too paranoid to play on anything higher than peaceful. But occasionally easy if I need bone meal/gunpowder/arrows/ender pearls/slime spheres/other mob drops.
I only play on medium+ on servers. Because there you can form a team and do stuff with others and it feels a lot safer overall.

I do creative single player mainly and survival multiplayer mainly. In creative multiplayer servers, your stuff is overshadowed, in single player your stuff isn't. In survival single player, you're more likely to die.
