Can't you just block Microsoft's IPs? You just wouldn't be able to access any of MS' websites, Windows Store, get updates or play Killer Instinct/Halo 5/Forza online. Besides someone did a test and MS still takes pictures of your screen, spies, records your data and send that info to them if you disable telemetry.
Besides ifyou want full privacy (to the most extreme case) you may aswell not be connected to the internet and make your own Linux distribution.
