Okay.

If a Pokemon has more than or equal to 101 EVs in a stat, then it will reduce to 100 EVs in that particular stat.

If a Pokemon has 100 EVs or lower in a stat, then a berry will reduce it by 10 EVs.

The vitamins give Pokemon 10 EVs in a stat and stop at 100 EVs. There, you train by yourself.
